A two-day professional masterclass focused on advanced lamination techniques, led by Italian specialist Davide Del Chierico.
This course is designed for bakers who already have a solid foundation and want to take their work to a top professional level, whether you work in a professional bakery or are an experienced home baker aiming for consistent, high-level results.
Over two intensive days, we will focus not only on how to do things, but more importantly on why. We will go through detailed work with dough and butter, including temperature, plasticity, and proper timing. You will learn how to precisely control the lamination process in different conditions and understand how the structure of layers affects the final product.
The course also covers workflow optimization for consistent performance in practice, as well as troubleshooting the most common mistakes so you can achieve reliable, repeatable results. The emphasis is on final products with perfect texture, flavor, and visual quality.
