Naše filozofie se zakládá na poctivém jídle, nejlepších surovinách, znalostech a dobré náladě. Podporujeme a propagujeme filozofii od čumáčku po ocas. Zpracováváme a vaříme vše, od hlavy až k patě. Sledujeme zvíře z pastvy až na váš stůl a víme, co vám servírujeme. Jen šťastná zvířata od šťastných farmářů.

Last year, we packed into cars and headed to Moravia to drink wine for “research”.

We met local winemakers, walked through vineyards, tasted (and tasted and tasted and tasted…) from barrels and bottles, argued, laughed, and searched for wines with character.

One of those characters was Petr Koráb.

A year later, that trip became something we can finally pour at Sansho: our own blend, created in collaboration with Petr, wearing a label made just for us. A local orange wine, matured in oak and robinia wood barrel. Funky, fresh, and full of personality - just how we love it.

Eline is from Amsterdam, but Prague feels more like the kind of city she was always going to end up in.

She works behind the bar at Sansho because evidently she loves being around humankind.
The noise of a full room, small conversations, the feeling of helping create someone’s evening is anti-routine to the Dutch born mademoiselle. After spending a great chunk of time translating text behind a computer or sitting alone and working in solitary, hospitality is genuinely what keeps her connected to real live action.

Outside of work, she writes. Eline is an author.
Her novel “Sitting Next to a Stranger” by no other than Eline Vedder is already sitting on the bookshelf at Sansho.
To those somewhat color blind that would be the one with her name on it! Or if we do perceive color that would be the bright blue one 💙

She says the next book will take place in Prague, probably around graveyards. Supposedly it is meant to be her second novel that will be published within a year or two.

Ms. Vedder is a kind and generous soul.
Yet not without vice.
She admits she sometimes listens in on conversations, eavesdrops or steals tiny details for stories. Be it the way someone dresses, something said after a second glass of wine or the strange little things people reveal without noticing. A word of warning to not be surprised to find yourself on one of the pages of her forthcoming literary works and future publications.

Before working here, she used to come to Sansho for birthdays, Valentine’s Day, New Year’s, and other special evenings and celebrations. She loved the general vibrations so much that one day she simply asked Mr. if we were hiring.
A week later, she was behind the bar herself.
And she most certainly is now an essential ray of sunshine within our crew. Always polite, happy to assist and always eager to support a bit of camaraderie.

If she wasn’t here, she thinks she’d probably be living somewhere warm near the sea like a barefoot hermit. But for now, Prague has her.

The steak comes from local farmer and goes straight on our grill.
The potatoes are crispy.
The XO is where things get even more interesting.

Originally from Hong Kong, our version is made in the house with dried scallops & shrimps, anchovies, smoked bacon, fish and soya sauces, shallots, chilli, garlic and chicken stock.

Salty.
Rich.
Packed with umami.

The fried roti is there to make sure not a single drop gets left behind.

The kind of background you don’t hear about, you feel. It’s in the way he moves, the way the room settles when he’s on. It’s the subtle things.

He got into this for a simple reason.
Going out with his parents as a kid always felt special. Not just the food, but the atmosphere, the care, the sense that it all mattered.

Now he creates that for others, with precision and a deeply rooted sense of care.

Tomáš doesn’t perform in service.
He orchestrates. Quietly. Precisely.
Full house, pressure high, and somehow it all flows. Naturally that is.
Plates land right, guests feel seen, the whole room held together by something you can’t quite name.
There is a gravitas and a certain “je ne sais quoi” one cannot fake. And the answer most probably lies in devotion. Real and Mature.

And that’s his signature: control without ego.
And a style that speaks loud without ever raising its voice. Clean, intentional, sharp, the kind of service that makes everyone around him better. You watch him once, and you get it.
It’s smooth.
And quite inspiring.

Off the floor, it’s simple.
Good food, proper drinks, time with his girlfriend. No extras, no noise. Just real life, done right.

Fun fact, because of course there is one:
a pint disappears in under four seconds.
Blink and you’ve missed it.

Sansho?
Some places you pick.
Some just lock in.
This one was instant.

Future plans?
He’ll get there when he gets there.
No rush. Just quiet confidence.

And if not this life,
probably somewhere farming organic unicorns.

Aka the storm behind the bar. Aka the gentle heartbeat of Sansho.
She comes from Russia, but honestly, it feels like she was forged somewhere between ice, fire, and a perfectly balanced shaken drink. Calm when she wants to be.
Dangerous when she needs to be. And always, always in control.

Polina is one of the most skilled and creative minds we have. The kind of bartender that creates moods.
Showcases off her passion. You don’t “order a drink” from her. In order to get to her craft you have to go through one of us on the floor.

You start a conversation with your night, and she decides how it continues. You could almost, somehow in certain ways call it witchcraft. Or Potion brewing.
We have most certainly thrown around these terms.
Sometimes she’s soft. Kind. Almost deceptively gentle.

Other times she’s sharp, direct, a little terrifying in the way only someone who truly knows what they’re doing can be. But that’s part of the magic. You truly don’t get perfection without a bit of edge. This is what we believe here at Sansho.

Polina is (in the humble opinion of one of our team members) a master of the water element. In a restaurant of fire, wind and earth one must understand that nature cannot and will not function without water. Be it booze or lemonade.

And yes, she’s one of the very few women behind the bar here. Not as a label. Not as a footnote. Just as one of the strongest, most technically precise, and creatively fearless people in the room. Full stop.
We love her deeply. Not carefully. Not politely. Fully.
Because Sansho without Polina wouldn’t just be missing cocktails, it would be missing a kind of chaos that somehow always tastes like balance.

Born in Puebla, Mexico, Chef Omar carries the depth and heat of Mexican cuisine in everything he creates. His work is rooted in a simple idea: to travel through food, discovering new cultures one dish at a time.

His culinary language is Mexican at its core but truly never confined by it. It’s alive, evolving, and informed by curiosity rather than borders.

When he steps out of the kitchen, you’re just as likely to find him lost in the dim light of a jazz concert or wandering through a city gallery, absorbing rhythm, colour, and atmosphere like ingredients for his next potential dish. An inspired chef is crucial for an environment like our kitchen.

For Omar, Sansho is more than a restaurant. It’s a living, evolving rhythm built on precision, movement, and momentum. Each day brings new challenges and shifting priorities that keep the work sharp, dynamic, and alive. That constant evolution isn’t disorder, but what fuels the excitement, focus, and craft behind every service.

His ambition goes beyond cooking. He is driven by the pursuit of knowledge, collecting experience with discipline and hunger, with a future vision of building spaces where passionate people can grow, create, and belong.

It’s indulgent. Sticky. A little spicy, a little sweet. Meant to be passed around, stolen off plates, eaten with eyes closed.

It is with great honor that we introduce Petr.
Aka Peter. Aka Mister Manager.
S-class General of House Sansho.

A quiet force for the past four to five years, Petr has become one of the restaurant’s essential pillars and the reason things run the way they should.

Born and raised in Prague, he started in service at 14, learning early alongside his father. What stayed was simple: a love for taking care of people, and a serious love for food.

Calm under pressure, fair in judgment, and kind in approach, he brings clarity to chaos, structure to noise, and balance when things tip.

Strong with numbers, sharp in communication, and highly analytical, whether it is cost control, timing, or how the pass suddenly has seven tickets and no explanation. Petr sees what others miss and keeps everything aligned.

His greatest strength? In his own words: “Everything.”
So far, uncontested.

A loyal friend and steady support, yet swift when standards drop. Tomfoolery is not on the menu. Still, he knows when to lift the mood, and on rare occasions may lead the team slightly off-script.

(Occasionally involving five Negronis at Tuesday lunch. Allegedly.)

He is the reason the restaurant functions. Not helps. Functions.

Honest, principled, and built on strong values.
Irreplaceable. Reliable. Essential.

With a weakness for truffle, he pairs our shiitake and black truffle dumplings with a Garage 22 truffle gin.

Outside of service, it is food, drinks, PC games, gym, and running. Once over 120kg, now around 90kg. Quiet work. Real result.

At Sansho, the rule is simple.
You don’t choose Sansho. Sansho chooses you.

Next step: sharpen the craft, raise the standard, and go deeper into wine. Properly.

In another life, still with a knife in hand. Chef or butcher. Always food. Always purpose.

If you hear smoke coming off the charcoal grill, that’s definitely Julian.

Chef Julian hails from Cali, Colombia. No funny business. Just Strength & Honor.

He grills meat like it owes him money. First, you’re treated by charcoal, then smoke, then you’re rested until you’re golden brown all around. And of course, medium rare.

Julian spends most of his free time in the gym. And by mostly, we mean daily. Discipline is truly important to Mr. J both in and outside of the kitchen. One will quickly notice this when faced with this beautifully gentle, tattooed young man.

Julian aims to create memories through food. And potentially, when the time is right, open his very own gastro bar.

He believes Sansho is a place of growth for him as a professional and as a man. And in many ways, we could not agree more. Time and time again, this sentiment has been an integral part of why so many great chefs at different stages of their lives have been part of our crew and have subsequently been shaped by the experience.

Julian’s Sansho pick is a beautiful, classic combo.
XO Strip-loin Steak with our spiced Potatoes with a delicious glass of Ruché Pro Nobis di Castagnole Monferrato. A favorite of ours from Piemonte.

When asked who he would have been if he weren’t a chef, Julian very firmly and confidently said he would have ended up being a GANGSTER.
