Shalamar Restaurant Indian subcontinent cuisine with Handi and Dum-Pukht specialities Dum Pukht means choking the steam to prevent the air from escaping.

The name of our restaurant, Shalamar, is inspired by the Shalamar Garden in Lahore, Pakistan built by the great Moghul king Shah Jahan - in the 17th century - the one who built the Taj Mahal as well. As with the Shalamar Basmati rice, introduced for the first time by us in the Czech Republic in 2001, we are now the first to bring the ancient cooking method known as Dum Pukht to central Europe. en the Handi is slowly heated, the heat creates the steam, which condenses and rolls down the curved walls of the vessel while the lid has been sealed with a paste of flour and water. We use only our own Shalamar brand of Basmati rice grown in the fertile foothills of the Himalayas.
