After mastering our focaccia, we’re honoured to bring you another Italian classic — this time from Tuscany.

What it is:
Schiacciata means “flattened” or “squashed,” named for the way the dough is pressed into the pan by hand before baking. Thinner, crispier, and oilier than a traditional focaccia, it demands an entirely different technique.

The method:
A 24-hour pre-fermentation using half the yeast — closer to the patience of a sourdough than the speed of a same-day bake. The result: a shatteringly crisp crust giving way to a light, open crumb, carrying the deep flavour only slow fermentation can give.

Tonight’s pairing:
Served with a celery and parsley salsa verde — fresh, sharp, and the perfect counterpoint to the richness of the bread.
