Straight from Sicily: House-Made Italian Sausage Arrives Tomorrow

Somewhere in Pina’s Kitchen right now, 5kg of Italian sausage is being made by hand — which is a polite way of saying someone has been standing over a counter with sea salt, cracked black pepper, and wild fennel for most of the day. It hits the menu tomorrow.

100% real pork, natural casings, no shortcuts. The kind of sausage that makes you suspicious of every sausage you’ve eaten before it. Rustic, Sicilian, and — we’re told — worth the wait.
