The croissant has its origins in the Austrian Kipferl, a crescent-shaped bread bun created in the 17th century, possibly in Vienna (1683) to celebrate victory over the Ottoman Empire. Introduced in France in the 19th century by August Zang, French bakers evolved it using puff pastry with butter, making it the current French icon.
