Drying the coffee is only part of the process. Keeping it that way is just as important.

Once a coffee arrives at Maniwa, our job is to preserve the work that’s already been done. From the way it’s stored to the moment it’s leaves our warehouse, every step is focused on maintaining a stable moisture level and protecting the coffee’s original profile.

Many of our clients will receive their coffee more than six months after we do. That’s why preserving quality over time isn’t optional—it’s part of our responsibility.

This is a day of quality control at the Maniwa Lab.

Every sample and every lot goes through physical analysis, roasting, cupping, and profiling. Sometimes a coffee is ready. Other times, it needs a few adjustments. When that happens, we share our observations with the producer, work through the details together, and continue improving.

This process helps us understand where each coffee fits best, identify exceptional lots, develop blends, and ensure that every coffee we export is one we genuinely stand behind.

Edier Vargas never imagined his coffee would one day travel this far.

For many years, Edier sold his coffee as fresh cherries to the local buyer, unaware of the quality he was producing. Today, he processes his own coffee, cups every harvest, and has a regular client in London who buys his coffee year after year.
