Anise | Corn with Caviar
Chef Julien, his culinary journey started from a Mexican restaurant, where brought up lots of memories many years ago. This inspired Chef to come up with a menu that would begin with memories, which include a crispy corn roll with Mexican traditional mole sauce, completed with local fine caviar and micro greens.

Chef Julien從事廚房的第一份工作是在墨西哥餐廳,這道歡迎小食主要選用自製玉米卷,搭配魔力醬以及七年魚子醬。
玉米是墨西哥菜中使用比較廣泛的,而魔力醬是傳統的醬料。兩者的結合,正是他想要對第一份工作的懷顧,也為接下來的菜品做了一個好的開始。
