Chef , chef&owner of LING LONG restaurant, together with Chef , formerly R&D Chef at Eleven Madison Park and the restaurant’s first Head of Fermentation, present a four hands dinner born from the mystery of fermentation on April 13.

For Chef Brock, fermentation is a language. Through koji, miso, and plant based ferments, he unlocked a new dimension of umami at EMP.
For Chef Jason, time ferments within the terroir. With “Xian” (umami) at its core, LING LONG brings a dialogue between traditional Chinese fermentation techniques and the contemporary palate.

The fusion of Eastern and Western philosophies seeks balance through contrast, and expresses elegance within the avant garde.

4月13日,LING LONG创始人兼主厨刘禾森Jason,与前Eleven Madison Park R&D chef、首位head of fermentation的主厨Brock Middleton,共同呈献源于「发酵」奥秘的四手联弹晚宴。

对Brock而言,发酵是一种语言:他通过曲霉、味噌与植物发酵,在EMP解锁了鲜味的全新维度。
对Jason而言,时间在风土中发酵。LING LONG以“鲜”为核,让中餐的传统发酵工艺与当代味蕾对话。

We are profoundly honored to announce that LING LONG Shanghai was once again honored with a place on the prestigious list, achieving an ascension to No. 9.

This recognition is a mark settled within the rings of time. We know well that every step upward is inseparable from the nourishment of the soil beneath—so we must root deeper, to be worthy of those who have walked this path with us. With gratitude, we will continue to cultivate.

With steady steps, clearly traced, we are honored to showcase the new branches and leaves of Chinese cuisine. 

The strength to rise comes from the depth of one‘s roots. Prior to the ceremony, Chef&Owner was invited to speak at  , where he joined a dialogue with culinary leaders from across Asia on the theme of “Rooted”. There, he shared his vision of contemporary Chinese cuisine: one that draws its strength from deep roots in Chinese culture, allowing new branches of innovation to grow naturally from the rich soil of tradition.
