Halo Halo, the Pinoy’s Favourite Desse rt is a perfect summer treat! Halo-ha lo and its Asian cousins have o ne common ingredient: shaved ice. Halo-halo mea ns ‘mix mix’ and has its roo ts from the Japanese kakigori that go es back a thousand years. In t he Philippines simple versions are served f or a few pesos street side, mo re elaborate ones in many cafes a nd very exotics versions at the popul ar franchises Razons. Halo Halo can ev en be found in some Manila Luxu ry hotels. We have now limited quantiti es daily available during the hot summ er months.

Slow Braised Beef “Chili Carneretta“ wi th Bone Marrow, Pickled Green Chili, Spani sh Butter Beans and Sourdough Bread is sin ce we opened on our menu a nd one of the best selling dish es. The exotic blend of South Ea st Asian spices paired with fiery, smo ky and fruit Mexican Chilies give th is hearty dish its deep character.
This ye ar Mesa Madre participated for the seco nd time at the friendly “Chili Co ok Off” organised by Great Leap Brewi ng in the Doujiao Hutong of Beiji ng. Last year we were still cooki ng from home as amateurs and w on the Judges Award. Now we ha ve a Cafe and as the on ly new small biz participating this ye ar, we were honoured to hand t he judges award to a young a nd passionate home cook. While talking to h im, he explained how many hours or resear ch he put into his Chili. It remind ed me of how we came up wi th our recipe over a year a go. He would like to open h is own restaurant and we wish h im all the best of luck on th is exciting journey.
Thank you to the Gre at Great Leap Team for organising th is unique event in Beijing and havi ng us participate again. Great beer, gre at people and great day.

Our “Everything Cookie” made of da rk chocolate, pretzels, potatoes chips and a pin ch of sea salt are a swe et and savoury delight. With an Ic ed Americans, Meiji Milk Latte or Cappucci no. A perfect morning or afternoon tre at. My favourite combination is with an Espres so with a shot of Baileys.

Recently, we went to Xiangxi a nd shared our bread to the loc al Miao people. It was an amazi ng and surprising experience! It was a shari ng of culture and knowledge about flavo rs and processes. We learned how to co ok Hunan cuisine as well as sha re what we do in Mesa Mad re kitchen. We are delighted to s ee that they liked our bread. So me ate it by chopsticks, by ha nd or by using any cutleries. Oh su ch precious moments that make our hea rt melt 🥰!
