Spring doesn’t wait.
Korean green tea begins with a very small window of time. As spring moves forward, the leaf changes and so does the tea.

A Korean tea field changes week by week.
The entire harvesting season is short.
Each stage exists only for a moment before the leaf continues to grow.

This is spring at its beginning.
우전(Ujeon) is harvested before 곡우(Gogu), one of the earliest moments of the Korean tea season.
The leaves are young, tender, and available only in very limited quantities.

This is 세작(Sejak).
Harvested around 8–10 days after 곡우(Gogu).
The leaf has already changed — slightly larger, with a different balance of aroma, sweetness and structure.

It is another moment of the same season.
By May, the leaves become 중작(Jungjak).
Not a different tea plant. Not simply a lower grade.
It is the same field, captured at a later moment in spring.

This is 대작(Daejak) — the season moving forward.
From June onward, the leaves are larger and more mature.
The character becomes stronger, deeper and more everyday.

Time itself limits the tea.
Much of Korean tea is still produced on a small scale and requires significant handwork.
Once that short harvesting window passes,
you cannot simply produce more.

Every harvest is a moment that disappears.
Once the leaf grows, that stage is gone.
