Tomato: First created in 2023, the dish is now in its third iteration. Seven varieties of tomato, each prepared to reveal its distinct character, are paired with a smoked burrata vinaigrette and finished tableside with a refreshing jalapeño granita. The herbs come from our own garden or are foraged in the alpine landscape surrounding Vals.
