L’Osciètre est un caviar issu exclusivement de l’esturgeon russe (Russian Sturgeon), offrant une richesse d’huile qui évoque le goût d’un beurre biologique. Ses grains, d’un diamètre supérieur à 3 mm, sont principalement de couleur jaune-brun ou dorée.

Il dégage un léger arôme de noisette, et sa saveur est sublimée par des accompagnements simples, comme du pain fraîchement grillé ou du riz vinaigré.
