A little recap of a beautiful summer
season.

Some partnerships just feel meant to be. 🥂

The theme of the lunch was the art of gesture, and nowhere is it more alive than at Bollinger. Sven’s love for the house is infectious. After his last visit to Aÿ, he’s still in awe of the hand riddling and the countless small, deliberate movements that go into every single bottle (and we’re still admiring the photographic menu he brought home 📸).

It was an even greater honour to host the launch and masterclass of La Grande Année 2018. It’s a transparent w**e, a pure expression of the 2018 vintage, and a time capsule shaped by human hands.

Thank you to Edvin Pierre Damidot and the whole Ch*****ne Bollinger team for sharing this gesture with us.

Four years ago today, Sven Wassmer Memories was awarded its third MICHELIN star. ⭐⭐⭐

It was a dream Sven had carried since he was 16, and one we built together.

To the team who took a leap of faith and joined us when three stars was only a crazy idea: you believed, you pushed through every hard moment, and you made it happen.

To the team who have kept the standard every day since: the pressure never stops, and you have carried it with such grace and class.

And to our guests, who were with us from the very beginning: there were moments when we doubted ourselves. You kept us going. Your love for this restaurant showed us we were on the right path, and every visit pushed us to be better. These stars belongs to you too.

MICHELIN Guide (official) our ambition is bigger than ever. Let’s see what the future brings ✨

What a summer we had!

Filled with laughter, joy and good people around
us. A community we truly appreciate and an
outstanding team that’s always ready to go the
extra mile.

We couldn’t have wished for more!
