My Naturally Sweetened Caramel Sprinkles

Today I’m showing you how I make the caramel sprinkles for my bakery, that uses natural sweeteners like coconut sugar and maple syrup (no icing sugar here!).

For these sprinkles we use powdered coconut sugar, along with tapioca (to act like the cornstarch that would normally be used), and water & vanilla. Then pipe them out, let them dry, and voila!! Homemade coconut sugar sprinkles.

We add these on our salted caramel vanilla cupcakes.

INGREDIENTS
* 1 1/4c ground coconut sugar
* 1/4c tapioca
* 1/4 tsp salt
* 3 1/2 tbsp water
* 1 tsp vanilla

INSTRUCTIONS
1. Start by blending your coconut sugar until super fine and powdery, like icing sugar, then transfer to a mixing bowl.
2. Whisk in tapioca and salt, then add the water and vanilla
3. Mix until smooth.
4. Adjust consistency as required - sometimes I need to add some extra coconut sugar to thicken it, or a teeny splash of water to loosen it (it can really vary based on your humidity, etc). You want this thick and pasty but pipeable. If it’s too wet it will spread and not hold a sprinkle shape.
5. Transfer to a piping bag with a round # 4 or #5 tip (or snip a tiny bit off the corner of a ziplock bag)
6. Pipe in rows on a parchment lined tray, and let air dry for 24-48 hours.
7. Then chop or crumple into desired sprinkle size, and enjoy!!
8. Stores in an airtight container at room temperature for up to a year.

🍍🍪NEW Pineapple Crumble Mega (starts Sat)

With the change in weather comes a change from warm cozy spiced cookies (today is the last day of choc-spiced shortbread mega - though you may still find some in our front freezer) to a tropical inspired fruity flavour.

I’m calling this one Pineapple Crumble: with chunks of fresh & freeze dried pineapple, pie dough and pecan-coconut-crumble, stuffed with homemade pineapple jam, topped with more pie crumble.

This one is “clean”, naturally sweetened, but has nuts.

Full ingredient list:
Millet flour
Sorghum flour
Tapioca flour
Almond flour
Coconut flour
Baking soda
Salt
Xanthan gum
Eggs
Coconut oil
Red palm fruit oil
Coconut sugar
Vanilla
Pineapple
Maple syrup
Fresh lemon juice
Ground flaxseed
Cream of tartar
Desiccated coconut
Pecans

After March 31, my POS system is being “discontinued” and I will no longer be able to read gift cards. (And will have to figure out new GC/certificates going forward but that’s a problem for future me, lol…)

“Buttertarts” Without Butter?!?

I have a few extra secret steps that make it super soft & fluffy and stay fresh so much longer (I’ve left it on the counter for DAYS). 🥰😉

One of the secrets is to use the tangzhong technique. It adds steps and extra time but in the end it is SOOOOO worth it.

Tangzhong is a Japanese/Chinese bread-making technique in which you pre-cook a small amount of your flour mixture with a liquid (in our case: water) to make a thick, gelatinous paste. This paste gets mixed in with the rest of the dough ingredients, creating in bread that is significantly softer, fluffier, and stays fresh for days longer than conventionally made bread. 🍞🫶

I’ve been working hard the last few days to restock my sourdough, pizza crusts, date squares, naan, fluffy bread and more, before I open at 12 today.

I’m currently sitting at an appointment for my kiddos hoping to get back in time 🤞but I did bake off fresh megas and got the front case step up before I popped out… 🍪🙌🏻 so it’ll be a quick open.

Behind the scenes making gluten-free grain free paleo vegan and for my bakery - Mary’s Mindful BakeHouse.

I used to flip each one with a spatula by hand and now do a scary tray flip that saves a ton of time, but I do lose the occasional naan oops😅😳
