​🥃 Our Underworld Specials series continues. This weekend, we highlight a man who defined the word associate: Frank Nitti.

​As Al Capone’s most trusted advisor and right-hand man, Nitti was the strategic mind behind the Chicago Outfit. While Capone made the headlines, Nitti made the business work, overseeing the vast logistics of the era with a dapper, disciplined hand. Born in Angri, Italy, his tastes remained loyal to the same Neapolitan soil as the Capone family.

​Feature No. 2: The "Frank Nitti" Signature Pizza

As Chef Jason describes it:
​"It is a Neapolitan-style feature in a rich sauce made from mozzarella, provolone, spinach, ricotta, garlic, and romano cheese."

​🥃 We are thrilled to pull back the curtain on a new series at Matteo's: The Underworld Specials. Over the coming weeks, it will be our pleasure to feature a collection of legendary dishes inspired by history’s most notorious figures. These features are steeped in tradition and crafted with such precision that they are, quite frankly, so good they’re criminal.

​Feature No. 1: The "Big Fellow" Walnut Spaghetti

​The Craft

To kick off the series, we look to the private table of Al Capone. While his public life was defined by chaos, his palate remained loyal to the Cucina Povera of his family's roots in Angri, Italy.

​As Chef Jason describes it:

​"It's a Neapolitan style pasta in a rich sauce made from toasted walnuts, garlic, parsley, and parmesan."

​The Heritage

Capone’s favorite—Spaghetti con la Salsa di Noci—is a masterclass in Italian minimalism. Originating from the countryside outside of Naples, this dish was a resourceful way to create a satisfying meal using simple pantry staples. It is a dish that demands high-quality ingredients, as there is nowhere for a chef to hide.
