Whenever we open a fresh bag of green beans, it’s nice to take a moment and a deep breath to get a sense of the coffee and possible flavour notes. Often you can pull out nuisances, even in the green beans. Our green coffee arrives in either 132lbs or 150lbs jute sacs within which is an inner, sealed bag. This protects the beans from the elements, and preserves freshness and flavour. Sometimes, when we open up the inner bag (for the first time since it’s left the country it was harvested in) remarkable, distinct aromas are immediately evident. In the case of Colombia Tolima, this is exactly what happened upon the first open; the air around us filled with the scent of dried apricot.
Musing with this aromatic-inspiration we decided to do something special with these beans. Colombian coffee beans are often wildly versatile; they can have subtle flavour notes such as citrusy-floral and stone fruit, well-balanced nuances of milk chocolate and peanuts, and withstand high-roasting temperatures bringing about dark chocolate almonds, and even caramel-smokiness. To showcase these remarkable green beans and how ‘roast’ alone can impact flavour, we’ve roasted them three different ways:
•A mild roast; we took the additional step to age the roasted beans with dried apricots for 14 days in order to further showcase this distinct flavour
•A medium roast has notes of milk chocolate covered peanuts
• A dark roast with slight smoke aroma, and tastes of dark chocolate and hazelnut.
