At MAiiZ, we are cultivating a culture of nixtamal in Canada’s Pacific Northwest an ancient Mesoamerican tradition finding new roots in Canadian soil.

The Quintessential Craft of Fresh Masa.
It starts with a single kernel of corn.

It doesn’t know yet that, in a few hours, it will become the tortilla holding someone’s first bite at MAiiZ.

Long before the dining room fills and before the first dish leaves the kitchen, the work has already begun.

The corn is cooked, rested, and transformed through nixtamalization an ancient process that has been passed down for thousands of years. Then comes the moment we look forward to every day.

The volcanic stones begin to turn.

Slowly and Patiently.

Instead of producing flour, they release something alive: Fresh Masa. Warm. Fragrant. Full of character. Every rotation unlocks flavours that industrial processing simply can’t recreate.

Fresh Masa is responsible of many other preparations in our menu from chips, tortillas, beer and desserts.

Fresh nixtamal is the quintessential foundation of Mexican cuisine.

This isn’t nostalgia.

It’s food technology perfected centuries ago.

In a world where almost everything is instant, we still choose a process that can’t be rushed. Because some things aren’t meant to be faster they’re meant to be better.

Every tortilla we serve begins right here, between stone and corn.

And once you’ve tasted fresh stone-ground nixtamal, it’s hard to forget where real tortillas begin.

Mole is one of Mexico’s oldest and most celebrated culinary traditions, with origins dating back centuries. Rather than a single recipe, mole represents a diverse family of regional sauces, each reflecting local ingredients, history, and technique.

At MAiiZ, our Mole Negro is prepared with more than 40 ingredients, including dried chiles, seeds, spices, vegetables, dried fruit, and Mexican chocolate.
Each ingredient is carefully toasted and cooked before being slowly stone-ground on volcanic millstones, developing the sauce’s signature texture and remarkable depth of flavour.

The finished Mole Negro is both gluten-free and vegan, and is available in select retail stores throughout Victoria BC . In the restaurant, it is the defining element of MAiiZ’s signature Duck Confit Carnitas, where its complexity complements the richness of the duck while honouring one of Mexico’s most iconic culinary traditions.
