Housemade Rigatoni Alla Norma
Saanich Organics eggplant, capers and red onion in tomato. Bergamot and basil leaves. Finished with ricotta salata cheese.
This pasta originates in Catania, Sicily, the birthplace of composer Vincenzo Bellini whose composition “Norma” is the pastas namesake. When playwright Nino Martoglio was served this pasta he allegedly cried out "Chista è 'na vera Norma!" ("This is a real Norma!") upon tasting it.
Stating that the dish was a masterpiece at the level of the much loved opera.
