Timeless dishes have a way of finding their way back. Tender braised veal, creamy saffron risotto, and thoughtful technique come together in a meal meant to be savoured and shared.

While Braised Veal Shanks with Saffron Risotto isn’t currently on our menu, the recipe lives in CinCin: Wood-Fired Cucina, Executive Chef Andrew Richardson’s award-winning cookbook inspired by the dishes, techniques, and philosophy that have shaped our restaurant over the decades.

First published in 2016, the book celebrates its 10th anniversary this year!

From our kitchen to yours, CinCin: Wood-Fired Cucina offers a little piece of CinCin to recreate at home. Available at the restaurant, fine booksellers, and online retailers.

Six courses. Four farms. One memorable evening.

On August 25, our annual Farm to Table Dinner brought together the farmers, growers and guests who make this evening so special for a sold-out celebration of food and community.

Chef de Cuisine Eddie Muñoz and Pastry Chef Gizelle Paré created six courses showcasing ingredients from Hazelmere Organic Farm, Hannah Brook Farm, The Farm House Dairy and Black Table Farm, each thoughtfully paired with w**es from British Columbia.

Throughout the evening, our featured farmers shared the stories behind what they grow and produce, bringing guests closer to the ingredients on each plate and the relationships that inspire our kitchen.

Thank you to everyone who gathered with us and made this year’s dinner one to remember.
