Butter Basted 10 oz Berkshire Pork Chop.

The new garnish for our pork dish is a warm sobrassada vinaigrette with confit caramelized shallots, thyme and Pedro Ximenez sherry (and 20 year aged vinegar too). The apple jam is a mix of house fermented and roasted granny smith apples, for a bit of funk and character.

Berkshire Pork is a delicious and marbled local cut, great to share or solo.
