Meet Paddy!

Server, third-string bartender, high school teacher, and a Cuchillo fixture for the past seven years.

Paddy’s been in the service industry for almost 15 years, starting as a busboy and working his way up to bartending at the Sandbar. Along the way, he’s done the rounds through sports bars, live music venues, Irish pubs and fine dining before finding his home here at Cuchillo.

Born and raised in Vancouver, Paddy spends his days teaching high school Social Studies and PE, then jumps behind the bar or onto the floor with us once or twice a week.

As he likes to put it: “By day, I make children smarter. By night, I make adults stupider.”

His name may be very Irish, but Paddy admits he’s really only Irish-ish.

When it comes to food, there’s no hesitation: our Pork Belly Confit is his death row meal. Pair it with a New York Sour or an Old Fashioned and Paddy is a happy man.

And when he’s not eating at Cuchillo, you’ll likely find him at Kitchen Dada Sushi Bar & Grill in Kits.

Seven years deep and still bringing the good times. Next time you see Paddy cruising the floor — or getting called up from the bullpen to bartend — say hey.
