Staff Spotlight!

Meet Ruby Roy!

Ruby has been part of the Cuchillo family for four years and has spent over 12 years working in hospitality. She got her start at Sandbar as a busser and worked nearly every FOH role imaginable before pursuing her passion for baking professionally for six years.

Born and raised in Vancouver, Ruby has spent much of the last decade travelling and working abroad, with some favourite stops including Malaysia, China, Colombia, and Australia.

Soon, she’ll be beginning a program in social work with the goal of supporting Indigenous communities as a proud member of Snuneymuxw First Nation.

Outside of work, Ruby loves cooking new dishes, perfecting her nail tech skills, watching movies, and spending time with her husband and cats.

Her go-to order at Cuchillo? A jalapeño margarita with the saganaki tacos.

⚡️

From line cook to one of our bar managers, Kristina has spent her entire working life in hospitality. She started cooking and making drinks at just 13 years old, studied culinary arts in high school, worked in kitchens for years, and eventually made the move to front of house. She joined Cuchillo 4 years ago serving and running mod shifts before becoming one of our Bar Managers 2 years ago.

When she’s not behind the bar, she’s usually travelling somewhere hot and humid in search of incredible street food. Vietnam, Thailand, and Taiwan are some of her favourite places in the world, though Mexico always has a piece of her heart too. In Vancouver, you’ll find her riding motorcycles, biking around Stanley Park, paddleboarding, golfing, making jewelry, or teaching herself how to DJ.

Her spice tolerance is legendary, so naturally her favourite Cuchillo dish is the Shish*tos with plantain chips and hummus. Drink-wise, she loves agave spirits — especially raicilla — and usually gravitates toward a Raicilla Margarita or El Pelonchas. Though her housemade Horchata cocktail will always be special to her as the first drink she ever created that became a guest favourite.

If she’s out eating in the city, there’s a good chance she’s somewhere in Crystal Mall hunting spicy noodles, grabbing izakaya , or drinks with friends .ca !

Meet Coulter Noronha — Bar Manager, cocktail creative, and agave spirit enthusiast.

Coulter has been behind the bar at Cuchillo for the past four years, with another six years in hospitality before that, working his way up from dishwasher to cook to bar back. That well-rounded background shows in everything he does — thoughtful, dialled-in, and always flavour-first.

He’s all about sharing stories through cocktails, especially when it comes to the incredible lineup of handcrafted agave spirits on our back bar. Whether he’s pouring, experimenting, or chatting with guests, Coulter is constantly exploring new ideas and bringing fresh inspiration into the mix. One of his favourite parts of the job is introducing people to the depth and diversity of small-batch spirits and the techniques behind them.

Fun fact: he may or may not have the Cuchillo logo tattooed somewhere… but we can confirm he’s travelled with the team to Guadalajara to dive deep into tequila and raicilla, bringing that knowledge straight back to the bar.

Right now, he’s loving the Contoy Iced Tea — and when it comes to food, the Skirt Steak Taco is his go-to, especially with that blueberry habanero compote hitting alongside the steak and polenta.

When he’s not behind the stick, you’ll likely find him at Keefer Bar, soaking up inspiration from some of the most innovative cocktails in the city.
