So what makes Southern-style BBQ different?

Instead of roasting or braising the brisket, I put it on the smoker before the sun comes up and let it cook for hours, giving it that dark crust and smoky flavour.

By the time it’s ready, it’s tender enough to pull apart with your hands 🤤

This food truck is where it all started.

8 years ago, we found it up in Kelowna, drove it down to Vancouver, and started serving Southern-style BBQ on movie sets.

A lot has changed since then, but our brisket hasn't 🤷 we're still making it Southern-Style.
