Every now and then, someone takes one look at our brisket and asks if it’s burnt.

Fair question if you’ve never had Southern-style BBQ before. I tell them about the smoke ring and hand them a slice, then watch the concern disappear pretty quickly.

Safe to say, we always see them back the next week for more 😉
