Our Black Pepper Steak Bánh Mì has quickly become our most requested sandwich since we launched our program.

Each order begins with tender steak seared in a hot wok with freshly cracked black pepper, then layered into a crisp bánh mì with house-pickled vegetables, cucumber, cilantro, and our signature sauce.

The bread has always mattered to us. Cherry’s husband’s family was in the bánh mì bread business in Vietnam, where an understanding of texture, structure, and freshness was passed down through generations. It’s a small detail, but one that continues to shape how we think about every sandwich we serve.

Prepared to order, balanced in texture, and made with the same attention to detail that has kept it a guest favourite from the beginning.

A little story behind one of our diners’ favourite dishes, from our very own Chef Cherry. ❤️

“Every time I make our crab spring rolls, it brings me back home to Hải Phòng, the coastal city where I grew up.

Back home, we call this dish “Nem Cua Bể,” our traditional Hải Phòng crab spring rolls. The filling is classic to where I’m from — pork, shrimp, crab, shiitake mushrooms, wood ear mushrooms, glass noodles, egg, and bean sprouts. In Hải Phòng, we keep the filling focused on the seafood and texture rather than adding lots of vegetables. Simple ingredients, carefully balanced.

When I moved to Vancouver, I never expected to find seafood that reminded me so much of home. Then I discovered fresh BC crab. The sweetness, firmness, and freshness immediately connected me back to the flavours I grew up with beside the ocean.

Over time, these spring rolls became a reflection of both places that shaped me, Hải Phòng and BC. I still import the traditional rice paper wrapper from Vietnam because it fries lighter and crispier the way we do it back home, but the crab itself here is truly incredible.

One of the best compliments I receive is hearing visitors from Hải Phòng tell me these rolls remind them of home… and sometimes even say they love the crab here more.

Every crab spring roll we serve carries a little piece of my story with it.”

A spring roll can hold a whole city in it.

Nem Cua Biển - our Square Crab Spring Rolls - are ordered at nearly every table, and once you bite in, you’ll understand why. A golden square shell cracks open to a rush of BC Dungeness crab meat, shrimp, pork, and shiitake - packed tight, bursting warm, nothing wasted.

Every Northern Vietnamese grandmother had her own version of this broth. The proportions were never written down, ginger, red dates, a whole chicken, passed from one kitchen to the next, guided by memory and instinct.

At Crab Hot Lau, that’s where every dish begins, not just with ingredients, but with stories carried through generations.

That spirit is what’s in this pot.

A whole free-range chicken, gently simmered into a clear herbal broth layered with jujube, goji berries, and ginger. Served with silky tofu, mixed mushrooms, napa cabbage, glass noodles, and a selection of fresh seasonal vegetables, each element meant to be added slowly, building flavour as the meal unfolds.

It’s light, nourishing, and deeply comforting , the kind of hotpot that’s less about intensity, and more about depth and layers of flavours. A style rooted in the north, where broths are clean, balanced, and meant to be shared around the table.
