Negitoro & Fried Sakuraebi.

This limited-time delicacy features fresh sakura shrimp, available only from April to May and November to December.

To ensure sustainability, the sakura shrimp fishery in Suruga Bay, Shizuoka is prohibited from June to September.

These shrimp transform from translucent to rosy pink upon sh*****ng, earning their name "Sakura shrimp."

House Processed Kazunoko & Avocado Misozuke Handroll

Might seem sacrilegious at first but the crunchy kazunoko contrasts the butter miso avocado paired with top grade ariyake nori is a piece of handroll that has a balanced texture and well rounded flavour.

Shout out .ca for providing the roe herring to us so we can process the herring roe into a calibrr of kazunoko thats very similar to Nigiriko (basically kazunoko that was processed on the boat right after the herring is caught and not frozen)
