One recipe, three ways to enjoy it!

Make one fluffy coffee mixture, then turn it into an iced mocha, breakfast spread, or frozen coffee treat.

Recipe:
• 3 oz (90 g) honey
• 4 tsp (20 g) instant coffee
• 2 tsp (10 g) cacao powder
• 4 oz (120 ml) warm water

Whip the honey first, then add everything else. Keep whipping until thick and fluffy.

1- Add it to cold milk for an iced mocha.
2- Spread it on toast for breakfast.
3- Freeze it for an easy coffee ice cream.

Your knock box might be doing more damage than you think.

Hitting your portafilter too hard can slowly bend the basket rim, especially on thinner baskets. That small change can affect the seal and eventually cause leaks around the portafilter.

Try a few firm taps with your hand first. It helps release the puck and puck screen with much less stress on the basket.

Your espresso setup will thank you.

Forget everything you know about floats. Persians do them differently.

This Persian Float combines saffron ice cream with fresh carrot juice, a summer classic loved in Iran for generations.

And because everything is better with coffee, I turned it into a Persian Float Affogato with a double shot of espresso.

**Persian Float Affogato**

1- 3 scoops saffron or vanilla ice cream
2- 1 oz (30g) saffron syrup, optional
3- 5 oz (150ml) fresh cold carrot juice
4- Double shot of espresso

Sweet, creamy, fruity, and surprisingly good with espresso.

Eight months in the freezer… are these beans still good?

I froze these back in January in airtight, sealed bags. After eight months, there’s less crema, the aroma is softer, and some of those fruity notes have faded.

But the important part? It still tastes delicious.

Freezing your coffee beans properly really does work.

Not every coffee should be brewed with the same espresso recipe. ☕️

The right ratio can completely change how your beans taste.

☕ Espresso: 1:2
18g in → 36g out
Balanced, full-bodied, and a great starting point.

🤎 Ristretto: 1:1 to 1:1.5
18g in → 20–27g out
Thicker, sweeter, and great when darker roasts taste too bitter.

☕ Lungo: 1:3
18g in → 54g out
Lighter and more open, great when lighter roasts taste too sharp or sour.

Before blaming your beans or your technique, try changing your recipe.

Your espresso might not be bad, you might just be using the wrong recipe. ☕️

Same beans, different ratio, completely different cup:

Espresso: 1:2, balanced and full-bodied
Ristretto: 1:1 to 1:1.5, thicker, sweeter, more concentrated
Lungo: around 1:3, lighter, more open, and higher extraction

I used the Meraki for this because the built-in scales make switching between recipes and hitting each ratio super simple.

Before changing your beans, try changing your recipe.

If I could start my coffee journey again, I’d probably buy less and learn more. ☕️

1- Good beans matter more than expensive gear.
2- Consistency comes with practice.
3- You don’t need every new gadget.
4- And there’s no single “perfect” recipe.

Start with the basics, change one thing at a time, and pay attention to what actually tastes better to you.

That’s where the real progress happens.

Stop changing everything at once when your espresso tastes bad.

Fix these one by one:
1- Keep your dose and brew time consistent
2- Adjust grind size based on Brew Time
3- Create a Puck Prep Routine
4- Adjust the water temperature for the final adjustment

One change at a time makes dialing in easier, and more importantly, helps you understand **why** your espresso got better.

If I could make you just one iced coffee, it would probably be this one. ☕️

This Persian Iced Latte is creamy, refreshing, floral, and incredibly aromatic. The pistachio, saffron, cardamom, and rose water are flavours I grew up with, so this one always brings back memories.

It reminds me of my Sôhân Latte, but brighter and even more aromatic.

Persian Iced Latte

• 1.5 tsp (15g) pistachio cream
• 1/8 tsp (0.25g) ground cardamom
• Double shot espresso
• 2 tbsp (30g) whipping cream
• 1 tbsp (15g) milk
• 1/2 tsp rose water
or orange blossom water
• 2 oz (60ml) milk
• 1 tbsp (15g) saffron syrup

Saffron Syrup
• 10–15 ground saffron strands
• 4 oz water
• 2 tbsp (30g) sweetener

If you’ve never tried Persian flavours before, this is a very good place to start.
