On the 38th floor above Toronto’s harbour castle, Chef leads Don Alfonso 1890 Toronto, the North American location of the family-owned from Sant’Agata on the Amalfi Coast.

On Earth Day, we return to where it all begins.

At Don Alfonso 1890, Chef ’s urban farm at Casa Loma is more than a source; it’s a philosophy. Three years ago, we transformed part of the estate’s historic gardens into a working farm, bringing it back to its original purpose of growing food for the table.

Today, it supplies nearly all of our microgreens and herbs, and a significant portion of our seasonal produce—allowing our kitchen to stay deeply connected to nature and the rhythm of the seasons.

This hyper-local approach reduces our environmental footprint while shaping a more thoughtful, responsive way of cooking, where ingredients are often harvested steps from the kitchen—and ultimately come to life on Don Alfonso 1890’s MICHELIN-starred menu.

One that values seasonality, sustainability, and the beauty of letting nature lead. In the heart of Toronto, this level of self-sufficiency is rare, but it’s what makes it meaningful.

A Mother’s Day brunch above the city made for slow conversations, Chef ’s spring flavours, and time that feels a little less rushed than usual. 🌹✨ At Don Alfonso 1890, it’s a moment to sit back, share, and let the day unfold beautifully.

Begin with Il Benvenuto, housemade Italian breads, and a selection of refined canapés.

Antipasti include Vitello alla Piemontese, L’Uovo 63° with burrata foam and black truffle, eggplant parmigiana, citrus-marinated tuna, and fried Nova Scotia lobster.

Primi feature I Paccheri with octopus and seafood ragu, saffron potato cream, and I Cannelloni with ricotta, smoked provola, and San Marzano tomato.

End with Chef’s selection of petit fours.
