Kona Coffee Chicken is a throwback meal I sold thousands of plate lunches when we ran our pop-ups and events.

Itโ€™s my Aloha take oh NYC Halal Street cart platters. Chicken thighs marinated in herbs, spices, lemon juice and Kona Coffee Grounds. Itโ€™s paired with Rice, Salad, Pitas with Hot Sauce and my own Garlic White sauce famously named crack sauce by peeps.

Our ๐•ค๐•š๐•˜๐•Ÿ๐•’๐•ฅ๐•ฆ๐•ฃ๐•– ๐••๐•š๐•ค๐•™ is our delicious ๐Š๐š๐ฅ๐ฎ๐š ๐๐ข๐  (our take on pulled pork)ย is made with pork shoulder which is braised for 6-8 hrs wrapped in banana leaves and then mixed with Big Eโ€™s homemade Hawaiian inspired special sauce.

Inspiration:ย The word โ€œ๐™†๐™–๐™ก๐™ช๐™–โ€ in Hawaiian literally means โ€œto cook in an underground ovenโ€.ย ย  This oven is called an imu.
When the meat is fully cooked, it is removed from the imu and shredded. This is done to allow the melted fat to mix with the meat to help maintain its uniform consistency and flavour. It is the main attraction at many luaus in Hawaii.
