This dessert was gluten-free, dairy-free, nut-free and refined sugar free!
A true challenge, and I'm very happy with the result 😁
Composition: lemon, olive oil and almond cake, topped with a plant-based lemon and maple whipped frosting, fresh berries, and raspberry gel.
To avoid refined sugars I used organic maple sugar, and organic coconut sugar. The plant-based frosting is made with vegan butter, deodorized coconut oil and homemade almond milk. The raspberry gel is raspberry purée and agar.
Lots of textures, lots of chemistry to work with, and I'm learning as I experiment. Love it!
