Every single pita gets my attention and a little bit of love. And honestly, my heart still stops for a moment every time I put one on the heat and wait to see if she’s going to open up and make that perfect little pocket. 🫓😍

🎉 IT’S OFFICIAL! 🎉

After a loooong process, lots of waiting, phone calls, paperwork, inspections, and even more waiting… I finally have my licenses! 🥹❤️

That means Zoe’s Shakshouka is officially licensed for both the food truck and catering! 🚐🍽️

The food truck will still be coming in the spring, but getting this part done is such a BIG step forward.

And now that the paperwork is finally behind me… I can start looking ahead to what’s next! 🥰

🌿 Fun fact about falafel!

Traditional falafel is naturally gluten-free! 💚

Mine are made with chickpeas, lots of fresh herbs, onion, garlic and spices — no flour needed. 😋

One more reason to always have some in the freezer! 😉

Busy days = easy meals! 😅

When I’m busy, it’s so easy to forget to eat… so I’m always happy when I have falafel waiting in my freezer. 🙌

A few minutes in the air fryer and I have a quick, healthy meal! I love it with my homemade pita… but lately I’ve also been putting them in my mini challah buns, and honestly, both are SO good. 😍
