Our current offering from Rwanda comes from Kirorero Station, located near Lake Kivu in the Western Province. Produced through COOPAC (Coopérative pour la Promotion des Activités Café) this lot is comprised of beans from smallholder farms in the communities of Gisiza, Remera, Kinunga, Buhoro, and Nkira.

This cup sports a deep aroma with notes of chocolate and raisin, good acidity, and a medium finish. Try it out while we have it brewing on tap in the cafe all this week!

Every Friday morning, our team sits around the large table in the roastery with a freshly brewed pot of coffee to conduct QC (quality control).

We sniff, sip, and discuss each angle of the cup. These notes are compiled and reflect changes made to our bag labels the following week, so our notes are always current and ongoing.

This week, our team is sampling our next seasonal feature single origin: Tanzania! This roast is not new to us; we set the green coffee aside last December to focus on other offerings. QC ensures that the roast is still turning out the way we want it to while using the roasting profile (it’s like the recipe) from the winter, or determines if any adjustments need to be made. Most roasting profiles see 2 or 3 moderate adjustments throughout the year as the weather changes.
