Ice cream? Gelato? Sorbetto? Whatâs the difference? We do get this question quite a bit so here are few of the main differences:
Ice cream is made with heavy cream & eggs which results in a higher fat content (10-25% milk fat) while Gelato is made with mainly milk and usually no egg, this creates a lower fat content (4-9%) which we feel creates a nicer mouth feel!
Ice cream is more of a whipped frozen custard, generally with more air incorporated while mixing, it gets served much colder to create those tight scoops.
Gelato is churned slower which doesnât allow for as much air to sit in the final product creating the rich, dense velvety texture we all love! Sorbetto is churned and stored exactly like gelato but is made with a sugar water base and lots of fruit & flavour!
