The answer is found in the small details.

🐖 We never use pre-ground pork.

We carefully select fresh pork with the right balance of lean meat and fat to create a filling that stays tender, juicy, and naturally flavorful after cooking.

Every batch of filling is made from fresh pork that is ground in-house according to PHỞ F&M’s own standards.

We do not grind it too coarse, which would make the filling loose and uneven.

We do not grind it too fine, which would remove the natural texture and sweetness of the meat.

The size of each piece of ground pork is carefully controlled so that it blends perfectly with glass noodles, shiitake mushrooms, wood ear mushrooms, and other fresh ingredients while maintaining the ideal texture after cooking.

Too much lean meat, and the spring rolls become dry.

Too much fat, and they become heavy and greasy.

Even the texture of the ground pork matters.

🍳 Another important detail is how the spring rolls are cooked.

At PHỞ F&M, our Nem Rán Hà Nội are pan-fried in the traditional Hanoi style, not deep-fried.

Pan-frying requires more attention, more time, and constant monitoring, but it allows the wrapper to develop a delicate crispness while helping the filling remain moist and flavorful inside.

It is the method many Hanoi families have used for generations and one that we continue to follow today.

One of Vietnam’s most beloved street foods is back at PHỞ F&M.

At PHỞ F&M, both the char siu and the pâté are made in-house.

Our char siu is marinated in a family recipe and slowly cooked in a special sauce to keep it tender, juicy, and full of flavour.

And the pâté?

Many Vietnamese people would say that pâté is the soul of a great bánh mì.

Rich, smooth, and full of flavour, house-made pâté brings all the ingredients together and gives bánh mì its distinctive Vietnamese character.
