Have you ever tasted the boreal forest? 🌲🍋
Every spring, the soft bright-green tips emerge on spruce trees throughout Northern Ontario. Known as spruce tips, these tender new growths have a surprisingly bright citrus flavour that has been enjoyed for generations in teas, syrups, preserves, and baking.
This season, I gathered fresh spruce tips by hand and paired them with lemon zest and wildflower honey to create these Boreal Lemon & Spruce Tip Cookies.
The result is a tender cookie with notes of lemon, honey, and a delicate forest-fresh flavour that is uniquely Northern Ontario.
One of my favourite parts of baking is finding inspiration in the changing seasons and the ingredients growing right outside our door. These cookies are a celebration of spring, local flavours, and the beauty of living in the North.
