Today I wanted to share a special piece of my family's history.
My father, **Theodore Likourgiotis**, was one of the original owners of the Diana Restaurant, which opened in Saint John City Market in 1962. Alongside Mike Feggos and Denis Mallioris, they built more than just a successful restaurant—they created a place where people gathered to enjoy great food, warm hospitality, and lasting friendships.
One of my earliest memories is seeing my dad in the kitchen at the Diana, wearing his apron and hard at work. My twin brother, John Likourgiotis, and I would sometimes help him by cutting potatoes on the fry cutter under his watchful eye. Our reward was always the same—a plate of fresh-cut French fries and a thick chocolate milkshake. Those are memories I'll always cherish.
The Diana became an important part of Saint John's dining scene and helped pave the way for many Greek families to establish restaurants of their own. Its legacy continues today through Splash Thai Cuisine and The Med Restaurant founded in 1971, which our family is proud to still own and operate more than 55 years later.
I'm incredibly proud of what my father and his partners accomplished. Their hard work, determination, and commitment to treating every guest like family continue to inspire us every day.
