Georgian Bay Whitefish is brined and roasted. Accompanied by the exciting vegetables coming off of Evan's farm. This week, it was fresh, new season onions, salad turnips, and round radish. Garlic chives and sorrel trim blitzed down into an allium puree, with sauce soubise split with garlic chive oil. ⁠

The restaurant will be closed August 8th to August 20th, as we travel back east for research, celebrations, a fun collab dinner with The Table, and (maybe!) some R&R.

An exceptional Saturday evening with our friends Black Bank Hill Featuring a six-course dinner, specifically paired with a vertical of four Black Bank Hill Syrahs and two white Rhône-varietal wines.

These wine styles and events allow us to explore different ingredients than what we would serve at our restaurant. Gorgeous duck, lamb, and pork from the excellent Butchery & Deli were featured on this bespoke menu. Along with some gorgeous maritime Tuna from Affinity Fish

Crème Fraîche Ice Cream | Pastry | Elderberry | Tree Syrups

A fun and enticing transition course right before dessert. House Crème Fraîche made with the incredible dairy from Bright & tangy Ice Cream sat next to the rich pastry crumble, garnished with some popping elderberry from our friends . The real magic hides beneath with the tree syrups. A combination of maple, birch, and spruce tip syrup add complexity, astringency, and a slight resinous flavour to the dish. Truly delicious.

Paired with an aromatic blend of Chardonnay, Gewürztraminer, Viognier, & Chardonnay Musque from a 2010 vintage. Truly delicious.

We always have such a blast curating food to pair with wines that the producers are enthusiastic about.
