Torched Ontario Lake Trout from Lake Huron. Carrots on display from the farm team at Restaurant Pearl Morissette, both roasted and cooked into a purée heavily spiked with coriander seeds from our own garden. Finished with a Black Garlic purée. The garlic grown and fermented by a family friend in Perth.⁠
