Shoyu Tonkotsu.

New on our freshsheet.

Creamy pork broth richly seasoned with our shoyu tare, the result of our tamari-based braised pork chashu. Topped with veggies, braised pork chashu, and a light drizzle of curried miso chili oil.

The Chopping Block now carries some of our frozen heatnserve ramen. In their freezer is our Coastal Tonkotsu and Spicy Tonkotsu. Coconut Lemongrass next week.

It is lobster mushroom season. Our local foragers have come in with the bounty and we quickly went to work.

A rich and creamy lobster mushroom bisque, onions garlic coconut milk and, of course, lobster mushrooms!

This makes a great noodle bowl, especially when topped with grilled locally grown lions mane and crsip veggies.

Also available a a straight soup in our freezer.

We are always playing, learning new things.

We've been playing with blended miso tare, inspired by and named after Maneki, restaurants in Birmingham and Worcester UK that we follow.

What this miso tare does to our base broths is nothing short of extraordinary. We've seasoned every broth we make with this miso tare - the mushroom, veggie, clear chicken, paitan chicken, the pork chicken blend, the beef and the tonkotsu - all of them! The result is OMG!

The picture shows the Maneki Miso Tonkotsu. It is quite something. If you are a fan of tonkotsu, this is something to try.

The goal is always to put a bowl of noodles and broth in front of you that you will think looks good, tastes good, has you coming back and telling people to give it a try.
