Our final post (for now). A farewell to our amazing community.

We started this cafe in the quiet and sleepy Industrial Park in 2020, but YOU have made this into what it is today. A sense of community and family that we will never forget.

We would see you on your good days, bad days, days you need a hug, when you have exciting news to share, need a good cry or just need to rant. We loved hearing you just came up for a drive just for something to do. We would feel honoured when you would bring family or friends who were visiting from out of town. The days where the entire parking lot would be full of people, eating, hanging around, dancing, laughing, playing, drawing, connecting, just enjoying life - that’s been the best part about it. You’ve brought so much joy and love into our lives and into Pemberton and we will forever be grateful for all of you for doing that.

To our lovely vegan community, thank you for supporting us from far and wide. We’ve heard more times than not “my vegan friend told me I should come here even though I’m not vegan” so keep spreading the vegan love. Thank you for being there for us since day one 💚

Thank you to everyone who has messaged us or come by in the last two weeks to share their support, love, memories of the cafe with us and words of encouragement. We could have never imagined this would turn into what it did. We have had SO much fun. It’s been everything and more we could have possibly dreamed of. And you guys are the reason why. Thank you for building this with us. We will miss you the most.

For those who don’t know our story of how we got the cafe going, here’s the Cole’s Notes version: in March 2020 we both got laid off our jobs. Leo’s dream was always to own his own restaurant, so when the opportunity for a cafe space opened up in April 2020, we took it right away. Fast forward a couple weeks, I found out I was pregnant with our son. It was a whirlwind and there was a time where I didn’t think we could do it, but we decided to go ahead as planned and keep the cafe going. And I’m so glad we did because that meant Leo got to share his passion and next level talents with everyone.

Yes, Leo is a very talented chef, but the most special part about him is his ability to make every person who comes through our doors feel like they’re apart of the family. His ability to know everyone’s name even if they’ve only been in once, how he can chat with someone he just met as if he’s known them for years, the time and effort he takes teaching our staff the ropes and skills that it’s taken him years to perfect, the way he jumps on any opportunity to help the community out. It’s his drive, intensity, passion and enthusiasm that have fueled the cafe every day.

I’ve worked beside him in the kitchen for years, and I still have no idea how he does it. He does it all so effortlessly and he is truly a master in his craft.

I think I can speak on behalf of everyone when I say - Leo, thank you for sharing your passion, gift and extraordinary talent with the community. It’s been a wild ride, but I’m glad I got to be by your side during it. Lincoln will be so proud knowing his Dad is living out out his dream and is doing a damn good job at it 💚

A love letter to Nicole 🫶

How do I even begin to write about someone who has been through it all with us?

Nicole has been with us for 1359 out of the 1542 days we have been operating. She does it all, no questions asked. She is our leader, our confidant and the person we have trusted the most with bringing our vision to life. She has jumped in to every single role that’s involved in making the cafe run and she’s handled it all with ease. She has solutions to problems before we can even ask the question. She picks us up when we have nothing left to give. She reminds us why we do what we do, even when it’s hard. She’s supported us when tough decisions had to be made. She’s been the cafe’s biggest fan, promoter and cheerleader since day one. And through it all, she’s been the greatest friend we could ask for. She has got us to where we are now. It goes without saying that Hwy. would not have become what it is today without her.

Nicole, words will never do it justice. We are immensely grateful for all your hard work, dedication, support and love you’ve given us the past four years. Thank you for choosing us. You will forever be apart of our Hwy. family 💚

P.s. It will be strange not seeing you 40-60 hours a week. We miss you already 😭😭

It’s our final weekend 🥲 It’s surreal to say, but here we are.
Our hours this weekend are:
FRI: 10:30-5:30
SAT: 10:30-6
SUN: 10:30-5 (or until sold out)
Our menu items for the weekend are: Smash burgers, Breakfast Burger, Big Crunch Burger, chick’n wraps, Falafel, Hot Italian Sausage, Greek Fries, Inferno Fries and hwy. spuds. We are prepping SO much food and we hope to stay full stocked on all items for as long as possible. We will be prepping as the weekend goes on as well but items will begin to sell out on Sunday to avoid food waste! Wait times can exceed an hour long during really busy times- so please be patient with us 😊

We are absolutely heart broken to announce that our beloved cafe will be permanently closing its doors in Pemberton on Sunday October 13.

To say this has been a difficult decision is an understatement and it is not one that we have made lightly. Leo and I started this cafe back in July 2020 when I was four months pregnant with our son but the realities of growing a family and a business while being so far from our support systems has been proven to be too challenging for us to continue. We have tried what we could, but ultimately moving closer to our support systems is what’s best for our family at this time.

Pemberton, it has been a privilege to be apart of this community for the past four years. You welcomed our little vegan cafe with open arms and the support has been more than we could have ever imagined. To everyone who has made the trip to come see us, our gratitude is endless.

We’re not sure what the future holds for the cafe, but we do know we will be taking the food truck with us back to Ontario. We’re hopeful and optimistic for the future.

We hope to see many of you before we close our doors here. You’ve all been apart of our journey in one way or another. You’ve literally made our dreams come true and I could never find enough words to express how thankful we are 💚💚💚

The cafe will be CLOSED on Sunday August 18, Monday August 19 and Tuesday August 20 to give us a little midsummer recharge. We will reopen as usual on Wednesday August 21!

WE NOW HAVE SOFT SERVE EVERY WEEKEND 🍦
Every Saturday and Sunday, we will have our soft serve flowing! We make our soft serve everyday in house, with coconut milk and soy milk as the base. It is 100% dairy free and always vegan 🌱 We are seriously addicted!! 🤤
