EVERY THURSDAY THIS SEPTEMBER — SAKE DISCOVERY AT MAHANA

I’ve always enjoyed sharing the stories behind Japanese food, sake, culture and traditions with our guests.

This September, I’ll be at MAHANA every Thursday for Sake Discovery — introducing different styles of sake, how they are made, where they come from, and how they change when paired with food.

You don’t need to know anything about sake.
Come curious, taste something new, and perhaps discover a bottle you never would have chosen before.

As a Japanese owner building a restaurant in Canada, I feel a deep responsibility not only to cherish the culture I come from, but to represent it with integrity and pass it on with care.

Omakase is part of that culture.

At MAHANA, I have the privilege of carrying it forward alongside two remarkable chefs, Chef Kani and Chef Simon. Neither is Japanese by nationality, but I do not believe nationality alone determines who can truly carry Japanese culture forward.

What matters is whether its spirit is understood.

The discipline behind the craft.
The respect for ingredients.
The trust between chef and guest.
The humility to keep learning.
And the responsibility that comes with the words, “I leave it to you.”

As the Japanese owner of MAHANA, that responsibility ultimately rests with me.

It is my role to ensure that what we present is not simply called omakase, but is grounded in the values, intention, and cultural understanding that give omakase its meaning.

I am proud to lead Chef Kani and Chef Simon in that work.

Culture does not belong to nationality alone.

It lives through those who understand its spirit, respect its origins, and take responsibility for carrying it forward.

Learning from the past to discover something meaningful for today.

In the restaurant world, we are constantly encouraged to chase what is new.

New concepts.
New trends.
The next thing people will talk about.

But at MAHANA, we believe that not everything meaningful needs to be new.

There is wisdom in what has been passed down through generations — seasonality, craftsmanship, hospitality, and the simple importance of sharing time with one another.

Every person is given the same 24 hours in a day.
Those hours quietly accumulate and, eventually, become a life.

When you choose to spend a few of those precious hours of your life with us, we want you to enjoy beautiful food, heartfelt hospitality, and, for a brief moment, the feeling of being in Japan.

And for our team, there is meaning in doing our own small part — cooking, serving, preparing, welcoming — with care.

This is what 温故知新 — Onko Chishin means to us.

Not simply preserving the past, but learning from it — and carrying what is meaningful into the present.

At MAHANA, every piece has been carefully selected with intention.

Many of the vessels we use are not reproductions or mass-produced imitations, but authentic works of Japanese craftsmanship — including antique Imari porcelain and lacquerware created by artisans whose work has been recognized as Important Cultural Properties of Japan.

In a world where convenience often replaces craftsmanship, I wanted to create a space where guests can experience the beauty of the real thing.

The food is only one part of the experience.

The vessel that holds it.
The hands that created it.
The stories carried across generations.

These are all part of Japanese culture.
