It is with extremely heavy hearts that we are sharing very sad news. Our Chef Daniel Tong has passed away suddenly. He is survived by his wife and two young children. Along with a large immediate family.
Dan has been part of our restaurant family for many years now. He started out with us at Backhouse 5 years ago and instantly wowed us with his culinary talents and charm. While working, he was a presence on the line with both staff and guests and helped lead us to new heights.
Dan was an integral part of Backhouse. He then was instrumental to the opening of Ruffino's. He harnessed being 'Italian' and helped us curate a creative and delicious menu.
Shi Tong was an incredibly fun adventure born out of COVID! Dan and Donald Shi would make the staff Chinese inspired staff meals. Ryan offered them the kitchen one night a week for a pop up. Dan was able to bring family recipes to us and connect our staff to Chinese food and culture. Him and Donald created something very special that has still evolved yet again this year! Newly named Wang Tong Foods.
Also born out of COVID was our next crazy adventure. We decided to open BarBea Wine Shop and Snack Bar. Nervous to throw another huge endeavour at Dan we broached the topic lightly. In true fashion he was 100% on board and the wheels were already turning on new dishes!
Dan was able to pivot on a dime with seamless transitions. He was a firm believer in constantly evolving and trying new things. He had a quick wit and a sassy style. He worked very hard and was loved deeply by his family at Ruffino's and BarBea. Our staff were inspired daily by his hard work and love of food.
We are beyond words. We encourage everyone to take a minute and think of a fond memory. Share a toast, some laughs, and tears together.
Dan loved his family fiercely and we loved him.
