Almost a year ago one of our Mexican regulars (Thanks Antonio!) shared with us a program run by the Mexican Consulate designed to highlight food producers dedicated to the preservation and continuance of Mexican cooking techniques, flavors and ingredients. Needless to say we felt that we fit into that category so we applied. Shortly thereafter we were contacted and asked to submit an application detailing our mission, ingredients, experience and recipes. An interview followed and we waited. Almost a year later here it is. The "Sello M" or the M Seal. (Translation in the comments)
To us it's more than just a piece of paper. It's recognition of what we set out to do. Provide a little piece of that which makes Mexican food so damned good. Real ingredients. Tried and true recipes. Soul. No shortcuts. No adapting to try and please everyone. Just simple and delicious street tacos that have the power to transport you to your favorite street cart almost anywhere in the vast and magical country that is Mexico.
Thank you to each and every one of you who has given us a try, asked where we'll be next and followed us through the seasons. We will keep doing what we've been doing regardless of accolades tho now we're just a little bit prouder. We'll try not to let it go to our heads but you better believe that we're laminating and posting this bad boy on the cart!
