If you’ve already joined us for our Mala experience, you’ve had a taste of one of China’s most exciting food traditions — bold spices, rich aromas and that unforgettable má-là flavour.

Welcome to the world of Chinese BBQ Skewers — 烤串 (Kǎo Chuàn).

Kǎo Chuàn is one of China’s most loved casual dining traditions. Walk through the streets of many Chinese cities after dark and you’ll find little BBQ stands and restaurants filled with the aroma of grilled meat, cumin, garlic and spices.

Every region brings something different to the grill — from classic northern-style cumin lamb to bold Sichuan spice, along with beef, pork, chicken and more.

And just like our Mala experience, Kǎo Chuàn isn’t only about the food. It’s about experiencing a little piece of China.

What is Mala Xiang Guo?

Mala Xiang Guo (麻辣香锅) originated in Sichuan, China, and has become one of the country’s most popular comfort foods.

Unlike hot pot, everything is stir-fried over high heat with a fragrant blend of Sichuan peppercorns, chili, garlic, and our house-made sauce. The result is a dish that’s spicy, savory, aromatic, and full of wok hei (the signature smoky flavor created by high-heat cooking).

It’s the perfect choice if you love bold flavors without the broth.
