From the depth of the sea to the purity of the bowl.

We use premium dried sardines (Niboshi) sourced from Japan’s Seto Inland Sea to craft our signature clear broth. Slowly extracted at precise temperatures, this traditional method preserves the delicate umami of fish while achieving a clean, refined taste—light, yet deeply layered.

No heaviness. No shortcuts. Just clarity, balance, and authenticity in every sip.

Experience a bowl where simplicity reveals mastery.

Crafted with respect for tradition.

Our Shio Ramen begins with a clear broth slowly prepared using classic Japanese techniques — kombu, dried bonito, chicken and beef gently simmered to draw out deep, natural umami while keeping the soup clean and light.

Paired with springy noodles, tender grilled chashu, bamboo shoots, fresh scallions, and a house-marinated ajitama, every bowl reflects the beauty of traditional ramen craftsmanship: simple ingredients, careful balance, and patient preparation.

A taste of authentic Japanese shio ramen, made the traditional way.
