Hatch Crafted

Hatch Crafted Coffee Bar, Roastery & Brewery. Driven by quality, innovation & experimentation. It blossomed into a ritual that gave him a daily sense of comfort and stability.

The story of Hatch Cold Brew starts with one man’s enduring love for coffee, and the simple, reliable pleasure it brought him in his years on the road. After a decade in manufacturing, travelling constantly to meet the demands of his job, Alfonso would settle for a short time on a remote factory site in the African countryside, a world away from his roots in Toronto. In spite of his nomadic past,

🇨🇴 STANDING WITH COLOMBIA’S COFFEE COMMUNITIES

On August 10, a magnitude 7.4 earthquake struck near San José del Palmar in Chocó, Colombia, causing significant damage across the country, including the coffee-growing region of the Eje Cafetero.

For us, Colombia isn’t just a coffee origin on a map. It’s home to producers, partners, friends, and families we’ve had the privilege of knowing and working with.

From September 1–7, we’re running a fundraiser to support coffee communities affected by the earthquake:

🛒 ONLINE ORDERS
For every bag of El Paraiso Lychee or Bomb Devil purchased online, we’ll donate $3.

➕ MATCHING BONUS
Hatch will match the total online donations dollar-for-dollar, up to $2,000.

☕ IN THE CAFÉ
We’ll donate 25% of all pourover sales during the week.

🤝 WHERE THE FUNDS GO
We’re reaching out directly to the Colombian producers we work with to understand where support can make the greatest difference in their communities. We’ll direct the funds based on their guidance, with the goal of getting support where it’s needed most.

September 1–7.

Shop online through the link in bio, or visit us at the café and join us in supporting Colombia’s coffee communities. 🇨🇴☕❤️

ALO COFFEE MURGO YELLOW HONEY 🇪🇹

Another beautiful offering from Alo Coffee. Founded by Tamiru Tadesse and his wife Messi, Alo’s journey began with a mission to showcase the exceptional potential of Sidama coffee—one that was validated when their first Cup of Excellence submission won Ethiopia’s inaugural competition in 2021.

“Murgo” is a Sidamic word for miracle or mystery, reflecting the extraordinary potential of this site. This 74158 lot is carefully handpicked, floated, depulped, and slowly shade-dried with a layer of mucilage left on the parchment, allowing it to develop its distinctive sweetness and fruit character.

Aroma: Lily, Violet, Peach
Flavour: Violet, Peach, Tangerine, Oolong

Origin: Murgo, Bensa, Sidama, Ethiopia
Producer: Tamiru Tadesse
Variety: 74158
Process: Yellow Honey

LA JOYA BOURBON JADE NATURAL 🇲🇽

Following the early arrival of La Joya Heirloom, we’re excited to share another beautiful offering from the farm.

La Joya was founded in 2017 by Samuel Ronzon and Gloria Hernandez with a focus on agroforestry, experimentation, and thoughtful processing. Their approach considers every step of production—from soil and varietal selection to processing—to create coffees with a strong sense of place.

This Bourbon undergoes La Joya’s 120-hour Jade Process, a fermentation-oxidation process designed to develop the natural microorganisms of the farm’s terroir. It is then slowly dried for 20 days in a forced-ventilation tunnel.

Aroma: Cherry, Strawberry
Flavour: Blueberry, Cherry, Chocolate

Origin: Ixhuacán de los Reyes, Veracruz, Mexico
Producer: Samuel Ronzon & Gloria Hernandez
Variety: Bourbon
Process: 120hr Jade Process Natural

GACHATHA AB WASHED 🇰🇪

Gachatha Factory has been part of Kenya’s coffee heritage since 1963. Located on the slopes of the Aberdare Range in Nyeri, the washing station works with more than 1,500 smallholder farmers growing coffee in the region’s fertile volcanic soils and high elevations.

This fully washed lot highlights classic Kenyan character, with careful fermentation, washing, and slow drying on raised beds resulting in a clean and vibrant cup.

Reminds us of:
Red Currant • Red Berries • Cane Sugar

Origin: Nyeri, Kenya
Producer: Smallholder Farmers
Varieties: SL28, SL34, Ruiru 11, Batian
Process: Washed
