Hanging tender, also known as hanger steak, is a prized butcher’s cut known for its rich, beefy flavour and exceptional tenderness. Best cooked quickly over high heat to medium-rare, then sliced across the grain for a juicy, flavour-packed steak. One of the interesting things about this beauty is that there is just one on every animal. The hanger steak is found inside the abdominal cavity, attached near the diaphragm, where it “hangs” between the rib and loin area.

The deli gem you never knew you needed…

Our classic “Mac & Cheese” Bavarian-style meatloaf is loaded with pockets of creamy, cheesy macaroni, then baked until beautifully golden. It’s smoky, savoury, cheesy and seriously comforting. Slice it thick, warm it up, and you’ve got the ultimate mash-up of butcher-shop goodness and comfort food or slice it thin and slam it onto soft fresh milk bun with some sliced pickles mustard and ketchup. It’s available sliced to order in our deli case or in take and bake loaves in the freezer.

We’re excited to be at Kamloops Farm 2 Chefs this Sunday for an evening of local cuisine, w**e, and live music supporting community food access.

We’ll be serving up our Mt.Dufferin Muffuletta:
- Served on house made focaccia, piled high with house-made Mortadella, Genoa salami, Capicola, and Rosemary Ham, finished with lovage pesto and a pickled jardinere salad made with market vegetables. 🥪
