If you want to present some of the local Serbian specialties to your foreign guests, you mustn't forget the ajvar. Ajvar is a specialty of the Balkan cuisine, made from red peppers. It is used as an addition to many dishes, and very often you just eat it on a slice of bread. Traditionally, it is prepared in mid-autumn, when bell peppers are most abundant, conserved in glass jars, and consumed throughout the year. In order to produce ajvar, bell peppers and aubergines (eggplants) are roasted whole on a plate on an open fire, a plate of wood in a stove, or in an oven. The baked peppers must briefly rest in a closed dish, to allow them to cool and to allow the flesh to separate from the skin. Next, the skin is carefully peeled off and seeds removed. The peppers are then ground in a mill or chopped in tiny pieces (this variant is often referred to as pindjur). Finally, the mush is stewed for a couple of hours in large pots, with added sunflower oil and garlic, in order to condense and reduce the water, as well as to enhance later conservation. Salt (and sometimes also vinegar) is added at the end and the hot mush is poured directly into glass jars which are immediately sealed.

Користи се као додатак многим јелима, а врло често се једе једноставно намазан на хлеб. Уз паприку се најчешће додаје и плави патлиџан. Ајвар се традиционално прави на јесен, када је пуна сезона паприке, од љутих и од слатких паприка и користи се целе године. Припрема се ручно у отвореним шерпама на шпорету на дрва. Испечене паприке најпре морају мало да одстоје у затвореној посуди, како би се охладила и да би се лакше ољуштиле и очистиле од семенки. Паприке се потом самељу и кувају неколико сати у великим шерпама, уз додатак уља и белог лука. Након што се ајвар скува, одлаже се у тегле и спрема за зиму.

Did you know Absinthe serves food? You can enjoy simple nachos to share on their patio or try some of the Serbian food they have on the menu. Dishes range from $8 to $13 (good proce eh?). My favorite was potato burek and wanted to post a pic of it today as I'm craving it. Then realized I was too busy eating it that I didn't take a pic of it haha 😂 I will just have to go back soon to get it lol.
