Dinner feature: Edgar Farms Asparagus 🌱
Our first feature in collaboration with the Old Strathcona Farmers' Market celebrates one of Alberta’s best signs of spring: local asparagus.
Grilled Edgar Farms asparagus served with whipped manchego, anchovy & caper aioli, toasted walnuts, and fresh chervil.
Asparagus season is short—just 6–8 weeks from mid-May to late June—and this feature showcases the very last of this year’s harvest. Tender, sweet, and at its absolute peak, this is local asparagus the way it’s meant to be enjoyed!
Edgar Farms | Vegetable & Beef Farm is located near Innisfail and can be found at the Old Strathcona Farmers’ Market on Saturdays & Sundays.
