Hello everyone!

November update:

The Virgo & Co. Menu has changed. I will now only be offering a variety of traditional, sourdough, and gluten-free breads. Other items such as scones, muffins, cookies, cinnamon rolls, donuts, brownies, and GF confections will be available only as special/custom requests of a quantity of 1 dozen or more.

This decision comes with the ever-increasing cost of ingredients. I have received plenty of feedback about the cost of my baked goods. The cost of my items is done via careful cost analysis that breaks down the price of each ingredient based off of the amount used in a recipe yield plus the labor to produce the items. As a small business owner I have to make a profit and I can only do so by keeping my prices consistent with cost of the ingredients. I wish I could offer my premium quality, oversized, from-scratch confections for a minimal price as I believe everyone should be able to enjoy their favorite foods made from high quality ingredients. But, the state of the economic world is sadly not conducive for bargain prices.

I understand that large corporations are able to provide higher quantity for less money; but they cut corners using additives, poor quality ingredients, mechanized processes, and often times can subsidize what they are doing with investor interest. But, I do not believe in cutting corners or diminishing the quality of what I do to create factory-style foods that are part of the ever-growing health crisis on the planet.

If we want to move away from corporate power and put money back into our communities we MUST support small business. Your investment in local artisans allows them to stabilize their costs as well as provide more jobs and localized economic well-being. We truly vote with our money, and as the holiday seasons are coming around I simply ask that you shop local or you order from small business platforms. We have the power to change our world, and it starts with supporting each other.

Sourdough!

It's now officially available at Virgo & Co.!

This is a sourdough cinnamon swirl loaf with a deliciously tender, chewy crumb and a slight crunch to the crust twisted with a decadent layering of butter, cinnamon, brown sugar, and vanilla that balances out the bite of the sourdough. An excellent addition to breakfast toasted and slathered in butter, or with a cup of coffee.

Okay, but why sourdough, besides the lovely tangy, punchy flavor? Did you know that the fermentation process that produces the wild yeast used to cause the rise and airation in sourdough is one of the most traditional and ancient methods of making bread? This process creates a fermentation process throughout the entire loaf during the bulk proofing (bulk fermentation), and then the 24-hour fermentation process (which all my sourdough undergo)causes sourdough to contain gut-healthy properties. It also reduces the glycemic impact of the bread and even breaks down a large portion of the gluten, making it consumable for some individuals with gluten-intolerance. This makes sourdough an amazingly healthy choice for those interested in improving their well-being while still enjoying one of their favorite foods!

About my sourdough starter: All organic white flour, rye flour, and whole wheat flour with filtered water and a touch of organic coconut sugar. I use a mixture of flours in my starter to cultivate a healthy, active wild yeast population that is nourished by the rich nutrients in whole wheat and rye. I have found this blend of flours adds a heartier, richer flavor to my breads, creating a traditional chewy, open crumb that has a more substantial, satisfying texture. The use of coconut sugar was a small addition in the first phases of my starter. Less than a teaspoon was used to add a unique flavor and give life to the starter. The amount that remains in my mature starters is negligible, but there is great importance in listing all ingredients used!

After being stood up on several orders I will now be requiring a deposit before I begin processing any requests in 2024.

All it takes is a few people to ruin it for everyone.

It is extremely discourteous to place an order, confirm it, and then be a no-show at pick up, especially after rescheduling pick up more than once. Spending an hour waiting at the meet up spot a couple days in a row, with no response, no explanation, and zero contact is not only an absolute waste of my time, but it's a waste of product and money as well.

If I fulfill an order and do not receive payment, it doesn't just disappear, I take a loss, and anyone who is a small business owner knows how difficult it can be to take even a small hit, especially with the cost of goods, insurance, and overhead in our current economy.

Please remember: your actions do affect other people and their bottom line. Ordering specialty craft confections means that I am making YOUR order personally as you order it. I am a small, artisan baker operating on custom and personal orders. If you stand me up more than 2 days in a row I CANNOT resell the product and therefor, I lose money. Please respect my business and the time I put in to creating wholesome, from-scratch baked goods that take time, labor, and money to create.

This is not how I wished to start the New Year, but boundaries are boundaries, and I cannot continue to have my time, money, and product wasted.

Switching to gluten-free for the new year? Looking for baked goods that defy the stereotype that you have to sacrifice flavor when switiching your lifestyle?

Gluten-free baking is my specialty. While I have 17 years of trained, traditional baking, I adapted many of my own recipes for my own lifestyle switch about 10 years ago and have been doing it for businesses, friends, and family since!

I take pride in crafting gluten-free (paleo and vegan adaptable) recipes full of flavor but without the preservatives or other caustic ingredients. Its a myth that healthy foods should taste anything less than amazing!

I will have a new and improved gluten-free menu up for the New Year, and I am more than happy to work with anyone for custom requests! In the mean time, check out my current holiday and current gluten-free menu!

Christmas Kolaches!

A traditional Czech confection, similar to a danish, a kolache is made from a yeasted enriched dough, proofed and shaped into spheres to form the tear-and-share style wreath seen below, then filled with fruit, cream cheese, and other fillings and baked until golden brown.

I decided to fill mine with more holiday-inspired flavors: eggnog custard, zesty orange curd, lemon cream cheese, and cherry.

$30/dozen -- choose a varitey and receive 3 kolaches of each flavor, mix and match, or pick your favorite singular filling.

Happy Holidays, Merry Christmas!

I know this post is a little late, but holidays have been really crazy! Lots of pies, bread loaves, gluten-free goods, cinnamon rolls, and a some party platters all going out for Christmas orders!

I hope everyone has had a beautiful and lovely holidays season so far, spending time with family and loved ones and enjoying the peace and quietude of the winter season!
