Ocean-aged w**e is officially on Canada’s West Coast and we’re treating it like more than a novelty.
Underwater/ocean aging has been explored in places like New Zealand, Japan, Australia, and parts of Europe.
In Canada, we’re aware of an East Coast ocean-aged project in 2024, so this is best described as:
One of the earliest in Canada - and the first ocean-aged w**e release on Canada’s West Coast.
At 40 Knots W**ery, this is a limited release.
And in partnership with Manatee Holdings, we’re building the bigger vision: a coastal hospitality experience with integrity: grounded in Leadership. Partnership. Stewardship.
Why bring an aquaculture company into a w**e story?
Because tourism is moving fast, and the experiences that win long-term are the ones built to stand up to scrutiny environmentally, operationally, and culturally.
What Manatee brings to this collaboration
Responsible collaboration on the coast (done right, not rushed)
Clear standards to avoid “sustainability theatre”
Relationship-first approach, including seeking a stewardship partner (listen-first, consent-based)
A model where premium tourism can contribute to real coastal care not just marketing
Tourism operators: collaboration invite We’re building the “Deep Cellar Weekend” (limited dates + limited allotment):
Hosting a tasting of the ocean-aged release at 40Knots (date TBD)
A story-led experience guests will actually repeat to friends
Easy pairing with local food + coastal partners (restaurants, charters, eco-lodges)
Operator-ready scheduling: group blocks + pre-booked allotments
If you’re a tourism operator (tour company, travel advisor, eco-lodge, charter, culinary tour, destination partner) and want early access to package this:
Comment DEEP CELLAR + your operator type.
We’ll DM the operator sheet + availability.
