Happy Friday! Yesterday I made my favourite Meatball recipe since I had some Ground Pork thawed. It’s called Secret Ingredient Italian Meatballs. So easy to put together and I even got to use fresh basil and parsley from my newly planted garden. These meatballs are baked for 20 minutes and then set into a bath of your favourite marinara sauce heated thoroughly. I didn’t even bother making pasta as I could not stop eating them just as they are. I froze about 16 in bags of 2 instead of putting in the sauce. Ready for another quick dinner. My step-daughter, Kristina also makes this recipe often for her family. By A Simple Palate.

Yesterday I made 2 Chili Rubbed Pork Tenderloin for dinner. Made this recipe before and had noted it was “very good”. Easy to come together. I did roast my Japanese Sweet Potatoes separately in the oven at about 380 degrees for an hour. Meat gets marinated in an orange juice/ vinegar garlic mixture before placing it over a bed of sliced onions and green beans with broth and baked for around 45 min. Turns out perfectly moist and nicely flavoured. We served it with a warm, crusty bun and a glass of wine. By Heart & Stroke. Recipe is in the comments section below.

I’m going to visit my good friend, Margit Friday so making her favourite (and mine) - Pea Soup in the Instant Pot. It’s done in literally 25 minutes! So easy! By the way - update on my cataract surgeries from March and April - I now only need reading glasses (lowest level). What a difference! Surgery itself was so easy and fast - no need for all the anxiety I had put on myself. Recipe is in the comments. My preference is for one tablespoon only of thyme. (Recipe calls for 2)

Today I made Lamb Shanks in the Slow Cooker. First I braised them, made a mirepoix and added some red wine we’ve been saving for such an occasion and veggie broth. Simmered all and added to the waiting shanks which were braised and sitting in the Slow Cooker. I cooked on high for 2 hours and switched to low for 3 hours and boy…. Meat was falling off bone tender. Broth is delicious served over mashed potatoes mixed with carrots and meat removed from

Happy 1st day of Spring guys! Boy we sure needed the sunshine we got today!! I read a thing about Feng Shui and it said open all windows for 9 minutes. Well we were able to leave them open for 3 hours! Was 11 degrees! I made banana chocolate chip almond muffins in the morning. You know my surgery was a good one- baking again! One more to go April 2nd. 🥈 also made Roasted Pork Tenderloin with Red onion gravy. Today I added mushrooms but have made this a couple times already. So delicious! By Canadian Living

During this Atmospheric river I was having a feeling for nice hot soup. Needed a change from our usual Chicken Soup. This is Creamy Chicken Noodle Soup. I made it almost to letter except I boiled 2 chicken drums for the meat and used its broth. I also added 2 big handfuls of spinach. It’s delicious! By Sally's Baking Addiction - Recipes.

Been so long that I've posted. I haven't done any baking in a while since I had cataract surgery March 5th. Stay posted as I will be baking up a storm as soon as I can! No makeup, no bending over, regimented drops 4 times a day and two ointments but I have a whole beautiful world in my right eye compared to my left. So looking forward to matching.

These Chorizo and Pepper Sandwiches on a Portuguese bun are similar to a Sloppy Joe (Portuguese style). I'm not sure where I can find ground Chorizo - maybe an Italian butcher shop. Here where we live, near Vancouver, in BC is very hard to find any Portuguese foods. by Celia Rego
