Do you also find yourself dreaming of wandering the streets of Lisbon in the early morning and getting hit by the incredible smell of a little cafe serving up hundreds of Pastel de Nata’s?

Well our incredible baker helped make part of that dream come true by making these Portuguese Custard Tarts in house!

Delicate, buttery layers of puff pastry filled with silky vanilla custard, baked until beautifully caramelized.

Lovely Lemon Latte -
Like a lemon bar in a glass, bright, zesty espresso swirled with silky white chocolate and a touch of lemon. Sweet, citrusy, and dangerously drinkable.

Citrus Kiss Matcha -
Your new summer obsession. Creamy matcha meets white chocolate and a kiss of lemon in the most refreshing sip of the season. Light, bright, and just a little flirty.

Mango “Sticky Rice” Mocha -
Inspired by the beloved Thai dessert, rich espresso layered with white chocolate and mango, crowned with a pillowy mango vanilla cold foam. Tropical, creamy, and absolutely worth the hype.

Summer Shortcake Soda -
Caramel-kissed espresso with banana syrup, topped with a banana cream cold foam and a pinch of flaky sea salt. Indulgent, bold, and just the right amount of extra.

Salted Caramel Banana Latte -
Strawberries, vanilla, and a whisper of cream over sparkling water. Fizzy, sweet, and nostalgic, like a refreshing strawberry shortcake on a warm afternoon.

Hi Comox Valley! 👋

We wanted to take a moment to introduce ourselves. We are Zach and Amanda Baxter, the new owners of The Mill Coffee. We are locals of the Comox Valley, with solid family roots here and we love what this special place has to offer.

Over the past while we have fallen in love and truly enjoyed this community and everything that makes The Mill so special. It’s more than just a coffee shop, it has been cultivated over time by the previous owners, the Usipuik family, as a place to gather, share community and friendship, a place to work and study, and a part of everyday life.

We are big believers in community, and the kind of people who love getting to know the regulars behind the orders. Our vision is to keep building on what has been a solid foundation of great coffee, friendly service, familiar faces, and a space people genuinely enjoy spending their time in.

We want to extend a huge thank you to Karin for making this transition so easy. We also want to thank everyone who has introduced themselves already and made us feel so welcome, and to our own community of friends and family who have cheered us on every step of the way. We are so excited for this next chapter.

Come say hi to us next time you’re in! And if you don’t find us here at the shop, there’s a good chance we are adventuring with our dog Pine, exploring all this wonderful island has to offer.
